The spring is here and like many I am enjoying the weather as it is slowly beginning to warm up. With that said, aside from the warmer weather, I also like to take advantage of the fresh fruits and such, especially around breakfast time. So when we were sent some of the R.W. Knudsen Just Blueberry to try and add to our breakfast menu, I was excited to check it out and add it to some of our favorite breakfast items!
With the blueberry and banana fruit smoothies, I know what is going in them, and I also like that they make for a quick, take on the go healthy breakfast option that my whole family can enjoy. For the smoothie you will need:
1/2 cup of fresh blueberries
1/4 cup Just Blueberry
1 cup ice
1 cup vanilla yogurt
Gather all of the ingredients and put them in a blender and blend them together until you get the consistency you are looking for. For the above recipe you can get 2 servings.
Then for a great breakfast that the family can enjoy together at the table that is healthy and perfect for weekend morning breakfasts, I made some steel cut oatmeal with some fresh blueberries and the Just Blueberry added to it! For the oatmeal you will need:
steel cut oats, cook the amount of the oatmeal you will need for your family as per the directions on the oats package
1 cup of fresh blueberries
1 cup of the Just Blueberry
Once the steel oats are cooked into your preferred oatmeal consistency, add a handful of blueberries and mix in the oatmeal. Then mix in a desired amount to taste of the Just Blueberry. I swirled it in to our oatmeal to give it flavor and also give it a fun look for the kids to enjoy!
