Around the holidays, we tend to do a whole lot of cooking. This year we will be making a big meal for Christmas dinner at my house. It seems that not only are the meats we go with very important, but the sides are also important. Well this year I am going to be doing several sides as well as a few main dishes. Recently I was sent a amazing pack from Bob Evans to review for my readers. In this pack I got a great lunch box that is perfect for packing lunches in, inside the lunch box was a Bob Evans Side Dish of mashed potato, some coupons for some Bob Evans products, and a really cool Potato Clock!! With this set I was asked to try not only the side dishes, but also do something a little different with the side dishes.
I love Shepherd’s Pie. It is one of my favorite dishes to make. Well I found an amazing recipe on the Bob Evans site where I found a recipe for some Shepherd’s Pie that I can make using the Bob Evans Mashed Potatoes. I also found other recipes on the Bob Evans site that I found to look very appetizing and ones that I am going to have to try. The Shepherd’s Pie was very easy to make and the end result was amazing, in fact, it was so amazing, I had finished making it, went to grab my camera and returned to the kitchen to find my husband serving it up for us and the kids. Oh well, I found a pic of what it will look like when you are done cooking it, and yes, it is as amazing as it looks!

1 package Original Mashed Potatoes (24 oz)
1/4 pound Velveeta Pasteurized Prepared Cheese Product, cut into 1/2-inch cubes (4 oz)
1 pound lean ground beef
1 cup frozen mixed vegetables (peas, carrots, corn)
1 cup beef gravy
Heat oven to 375F. Brown meat in heavy medium ovenproof skillet; drain. Return meat to skillet; stir in frozen
vegetables and gravy. Combine potatoes and VELVEETA; spread over meat mixture. Bake 20 to 25 minutes or
until heated through and lightly browned. Serving Suggestion: Serve with a mixed green salad and your favorite
