The kids are back in school and the fall is going to be here soon. For me that means lots of baking, and when it comes to the baking, I enjoy trying new things to bake for family and friends. Recently I was sent some of the Viki’s Granola Blueberry Almond to try out and use in some of our favorite recipes!
I like that with the Viki’s Granola, I can not only add it to some yogurt in the mornings, but also use it for snacks and even baking. We found this granola to make for a great addition to a morning coffee cake.
For the coffee cake, we used some of the Vikis Granola Blueberry Almond. It was simple to mix together, took about 25 minutes to bake and turned out to be a great breakfast cake for the family to enjoy before leaving the house in the mornings.
For the Cinnamon Streusel
1/3 cup bisquick mix
1/3 cup packed brown sugar
1/2 teaspoon ground cinnamon
2 tablespoons firm butter or margarine
1/4 cup Viki’s Blueberry Almond Granola
For the Coffee Cake
2 cups bisquick mix
2/3 cup milk or water
2 tablespoons sugar
1/2 cup Viki’s Blueberry Almond Granola
Directions: Heat oven to 375°F. Grease 9-inch round pan. In small bowl, stir the streusel ingredients until crumbly and set aside.
Mix coffee cake ingredients until blended. Put in a pan then sprinkle on the streusel topping. Bake 18 to 25 minutes or until golden brown.
