#Giveaway Twice Baked Ranch Potatoes with Litehouse Foods

With the holidays upon us and the menus being made for those Christmas dinners, I find that I like to create side dishes that everyone can enjoy. So when I was sent some of the dried herbs, dressing, and cheese from the Litehouse Foods line, I was excited to create a great side to add to this years holiday menu!

Well, when I was asked to create a dish to share, I thought of one item that my family enjoys when it comes to those sides, and for me I found that the various potato dishes we like came to mind. And one that is a favorite of ours is the twice baked ranch potato.

To get started you need:
6 bakers
1 container of the Litehouse Foods Feta Cheese Crumbles
1 package of bacon
1/2 a bottle of the Organic Ranch Litehouse Foods Dressing
1 tsp Litehouse Dill
Litehouse Chives to add as needed to top
1/2 cup of sour cream
1 stick butter
shredded cheddar cheese for topping
salt and pepper

Preheat oven to 425. Get bakers, wash them, then rub butter on potatoes and sprinkle salt them, wrap the bakers in tin foil. Once oven is ready, place bakers in oven for 40-45 minutes. While bakers are in oven, cook up the bacon. Chop bacon into small bits and set aside.

Remove bakers from oven, carefully open the bakers and spoon out the insides of the potatoes into a mixing bowl without tearing the skins.

Add ranch, feta cheese, dill, sour cream, and rest of butter, mix well. Spoon mixture back into each of the baker shells. Sprinkle a small amount of salt and pepper to tops, then sprinkle shredded cheese, bacon and chives on top as well. Place bakers uncovered, back into the oven for 3-5 minutes or until cheese on the top is melted. Take out and serve!
