The holidays have come and gone and like many, I am on the path to find ways that can help me with keeping those new years resolutions. I have found that with the resolutions, after we get past that first week, many end up ditching those resolutions they made on the first and going back to the ways they vowed to ditch on the first of the year. So like many, I seek out products like the ones I can find from the R.W. Knudsen line which can be used both as a great juice to enjoy, but also as a ingredient for many tasty and healthy recipes.
To help me when it comes to keeping my resolution of finding ways to be healthier this year, I was sent a great pack of juices along with some cooking utensils and recipes from the people at R.W. Knudsen.
Being that we are in the Pacific Northwest, I have found that foods such as salmon are what many here might consider as a staple. And naturally I found that adding various salmon dishes to mine and my families menu is ideal when trying to change up our eating habits and find ways to eat healthier.
With the products we were sent I decided that I would make a Cherry Glazed Salmon over Wild Rice using the Just Tart Cherry Juice from R.W. Knudsen in the glaze.
To get started you will need:
2 cups wild rice
(put rice in pot with 4 cups water, turn burner on medium heat and cover)
Stir rice often to keep it from sticking to bottom of pot, once water is gone turn off the burner and set rice aside
For main dish:
1 salmon cut into serving sized portions
2 cups R.W. Knudsen Just Tart Cherry Juice
1/2 cup balsamic vinegar
1/3 cup low sodium soy sauce
1/3 cup steak sauce
1 tsp clove
1/4 tsp ginger
1/2 cup (light butter substitute)
2 tbsp jerk seasoning
1/2 cup crushed pineapple
3/4 cup sugar 0 calorie substitute
Preheat oven to 425. Put pan on burner with olive oil inside on medium high heat. Put salmon skin side down for about 3.5 minutes, remove salmon from pan and put on oven tray. Cook for 15-20 minutes until done to your liking. While salmon is in oven, take all of the ingredients listed above minus the salmon and rice and put in sauce pan. Stir all ingredients together over medium heat and continue mixing until all butter is melted and a small boil has started, reduce sauce to your liking and taste, thickening as you see fit. Once salmon is done take out of oven. Put two spoonfuls of the wild rice on each plate, then place salmon on the top of the rice bed. Then spoon sauce over top of the salmon and serve.
We found this dish to be very tasty as well as filling, and is a dish that the whole family was able to enjoy! Making the juices from the R.W.
